Sometimes less means more...

In relation to the bigger interest to different diets, we propose delicious and useful product - high protein bread with high content of proteins and low content of carbohydrates.

Тhe diets have the aim to limit the carbohydrates at the evening, and also as we know the separeted eating also is famous with the limited acceptance of carbohydrates. Now there is a decision for this needs–  high protein bread - Abendbrot. It has high content of sunflower seeds and big milling soya.

You receive less carbohydrates, but more proteins – this are the main characteristics of a bread that can be eaten for a dinner. With just 10,3 carbohydrates and 25,8 protein, the bread is perfect for various types of diets and can give the needed quantity proteins that are necessary for a dinner.

We present our recepie for this bread:

Mix IREKS DAS ABENDBROT

  760 gr

Linseed 

  130 gr

Sunflower seed

  90 gr

Yeast

  30 gr

Oil

  40 gr

Water approx.

  800 ml

Total:

  1850 gr

 Technology:

Mixing time                      

8 minutes on slow + 8 minutes on fast motion

Dough temperature

around 27 ºС

Scaling

80 gr after the dough is separated  have to be rounded. As desired you can do topping (sesame:linseed:sunflower - 2:1:1)

Fermentation

55-60 min in standart conditions of fermentation chamber

Baking

in 230 ºС with reduction of the themperature, no steam for 20 - 22 minutes
